Very delicious and easy to prepare. The smokyness of or the adobo and the sharpness of the cheddar go together very well. We like it spicy at my house so I always add 1 extra chile and an extra 2 tbsp adobo.

Me and my Husband love these I have to pull the chicken out before adding the chipotle for my son and finish his in another pan with the cheese.

I thought these were really delicious and quite easy, too! Perfect for a busy weeknight. I added a little ground black pepper but that was the only change that I made. I freeze the leftover chipotle chilis separately with a little sauce in a ziploc bag so that I have them ready for other recipes.

I enjoyed this recipe, but it was rather spicy. I have a tolerance for spicy food and although this was tasty, I would either reduce the suggest for chiles or completely remove it. My children could not eat this, but my husband loved it. I will definitely be making adjustments next time.

This was surprisingly good! I didn't measure anything. Used a pound of the packaged grilled chicken breast pieces, a large onion, and 3 bell peppers. Fresh garlic, maybe 5 small cloves. More salt than called for. About a teaspoon each of dried thyme and oregano. At least two tbsp. of puréed chipotle chiles in adobo sauce. I'll use more next time; could have used a little more heat. Served on tortillas and sprinkled the cheese on top instead of mixing it in. I think the recipe as written would have been very bland but then we love highly seasoned food. It's really quick and easy to make after work if you use the prepared chicken. Definitely a keeper!

We can't get enough of these! We've even turned the leftovers into breakfast sandwiches by adding a fried egg on top. I often use rotisserie chicken to save time - works well.

These are really awesome. I have made them serval times as a quick weeknighit dinner. I add extra cipolte because we like the heat and serve wtih sweet potato tater tots or chips and pickles. I also used light hot dog rolls to save some carbs/calories there.

So good. Smoky spicy and cheesy. We grilled lightly seasoned chicken breasts and I cut them up and added to pan was the only variation. Next time, I will toast the buns a bit too.

These were excellent. My teenager loved them as well. Perfect level of heat. Used fresh garlic and chicken breasts sliced thinly. Yellow pepper was what I had on hand. Served with ripe, juicy cantelope that helped kill the mild mouth fire. Yum. Will definitely be adding to our regular rotation.

We loved this! I took another reviewer's advice and rolled the mixture into a tortilla, added extra adobo sauce and used fresh garlic. Great tasting and easy to make.

We love this recipe & we probably have it every other week. I shared it with my daughter & they love it too...my only complaint, bottled garlic???? Has to be one of the most repulsive things on the market-how long does it take to mince up a little garlic? I would never use this in my kitchen LOL Great sandwich otherwise!!

Delicious! This recipe is a keeper. I sprinkled the cheese on at the very end and only needed half the amount called for. I served the chicken on whole-wheat hot dog buns, and it was perfect.

Very tasty! Didn't mix in the cheese because my husband doesn't like melted cheese in things but otherwise pretty much followed the recipe. Simply served with corn. Will make again!

These were so simple and really tasty.My fiancee loved them and the simplicity of them.Next time I will definitely add more of the chile and sauce because both of us like spicy and it wasn't quite spicy enough.The only thing I did different was add dried oregano and I think it gave it more flavor.We will absolutely be making this again.

This was perfectly spicy and the thyme added a nice herbal note. It was quick and easy to make. I must admit, I copied another reviewer and instead of serving this in a bun, I served it in a flour tortilla with sour cream and salsa (only because I didn't have buns on-hand). I will make this again, in a bun. It was great.

Can't believe how good this recipe is. The sharp cheddar is a really great touch. Instead of using a canned chipotle chile I rubbed each chicken breast with ground chipotle pepper and a little sea salt and let 'em sit for about a half hour before slicing them into thin strips and proceeding with the rest of the recipe. My fiancee was skeptical but really liked it too! Doesn't heat up that well for leftovers.

Did not care for the Thyme in this particular recipe. I would of rather had the flavor of Oregano. Otherwise it was great. Oh and I did use Pepper Jack instead of the cheddar.

We really liked this recipe! We doubled the amount of chipotle - was a little spicy for me this way, but hubby loved it! (he even added jalapenos to his!). I loved adding the cheese into the warm mixture - made everything melt together. We ate this with tortillas - made a great weeknight meal!

I tripled the chipotle for more heat and used Quorn meatless chicken. The combination of peppers, onions and thyme is perfect! I piled everything on deli rolls, topped with low-fat colby/jack cheese and broiled in the oven until toasty. Simple and delicious - great weeknight meal!

My husband and I enjoyed this recipe. I used boneless chicken thighs instead. It has a bit of a kick with the chiles and sauce. I also used whole wheat hoagie rolls and served it with dill pickles and baked potato chips. I would definitely make this again.

Yummy! VERY simple and quick. Didn't change it at all except that I halved the recipe and rather than use 1/2 tbsp chipotle sauce I just used a heaping teaspoon. It was plenty spicy for me but I don't like things too hot. I toasted the hoagie rolls and they got a little TOO crispy so I recommend just warming them up but keeping them soft. I also used a regular low-fat cheddar rather than sharp cheddar and I think the sharp cheddar would stand out better against the spiciness. Yum. I just served it with a salad but I think it would be good with baked chips or some sort of low-fat potato salad or low-fat cole slaw.

Tasty! I added more pepper than it called for to make it a bit more spicy. This recipe is definitely a keeper for a simple weeknight meal.
